Spring is finally here, despite the cold, and with Easter right around the corner, its time for some Spring-time fun with picnics, Easter egg hunts, and outdoor parties coming soon. Time for a fun, easy to make dessert recipe that will wow your guests, like these flower, lemon and bee cupcakes.
(I saw the idea for the flowers and bees in a magazine about five years ago and I wish I could remember which one so I could give credit. But I’ve seen the flower idea around the web enough that it would be hard to pick the right source to cite.)
I think the bees and flowers look good together, and I also liked the fresh look of the lemons to go along with them.
- Large marshmallows
- Colored sugar for the petals in whatever color you like
- Gumdrops, green or a color that coordinates with your petal color
All you do is cut each marshmallow in half with scissors. Press the cut/sticky side into the colored sugar until it is well covered. Lay each petal on the iced cupcake in a circle. Put a gumdrop in the center. Couldn’t be any easier!
- Yellow gumdrops
- Black gel icing, like this one
- Sliced almonds like these
Cut each gumdrop in half, lengthwise, with a paring knife. Using the paring knife, make a tiny slit on both sides of the gumdrop. Stick the pointed end of a sliced almond into each slit to make wings. Using the black gel icing, draw two lines across the “body” of the bee and make two little dots for the eyes.
- Lemons, sliced into thin wedges
- Granulated sugar
Pour sugar into a shallow dish. Press and rub the slices of lemon in the sugar until they are completely coated and have a nice sugared look. I was going for the look of those candy lemons like these Lemon Fruit Slices.
For each of these cupcakes, I used a basic star tip and just put star dollops of icing all over the cupcakes. But you could get really creative with this and make green grass using a small round tip. Or use a wide circle tip in a swirl to make a beehive shape like these. A few bees on top of the flowers would be cute too. In my hunt to try to cite the original source for the flower idea, I stumbled across these at Between Naps on the Porch and hers are just darling!
My favorite cake mix for cakes and cupcakes is this Duncan Hines Moist Deluxe Butter Recipe Golden Cake Mix . It just has a really good, moist buttery flavor and I always get compliments when I use it.
These are so easy to make and they look great when all put together. I wish I had gotten a shot of them all set out on display, but I had to grab these shots in the cupcake holder before heading off to the party at the park.
